Familiar flavours with a fresh twist
There is something comforting about a pot simmering slowly on the stove. The aroma of onion, chicken, pumpkin and herbs makes a kitchen feel homely. This recipe builds on familiar South African sweet-and-savoury flavours while keeping the balance careful: apricot jam adds just enough roundness, mustard brings sharpness and a small splash of vinegar prevents the sauce from becoming heavy.
This is not a formal restaurant dish. It is a generous dinner that is easy to serve, share and reheat. Every home naturally has its own way with a chicken pot. Some families prefer more pumpkin; others like to add extra potatoes or a pinch of nutmeg.

Three budgets, the same heart
The budget version uses frozen mixed chicken portions, smooth mustard and milk. It still produces a full-bodied sauce when the chicken is browned well first and the flour is briefly stirred with the onion.
The mid-range version uses fresh drumsticks and thighs, wholegrain mustard and cream. It is the default choice and offers a good balance between cost and convenience.
For the premium version we use free-range chicken thigh fillets, baby potatoes, dried apricots and fresh herbs. These ingredients make the sauce richer and the presentation neater, but the dish remains recognisably South African home cooking. The premium version is not ‘better’; it is simply a choice for a special meal.

Adjustment for your choice
Stir the cake flour into the vegetables, add the stock and gently simmer the fresh bone-in chicken for 35–40 minutes. Add the cream during the final 5 minutes and do not allow it to boil rapidly. Use the standard times.
Do not simply multiply the cooking time mechanically. Test the chicken for doneness.

Let the sauce develop gently
The pot should simmer gently, not boil furiously. Bone-in chicken needs longer than boneless thigh fillets, so the cooking time changes with the budget choice. Stir in the milk or cream only near the end and let it heat through. Then taste for salt, pepper and acidity. A few extra drops of vinegar can balance a very sweet jam.
Serve the pot in shallow bowls so that each person receives chicken, vegetables and sauce. A slice of fresh bread is welcome, but the potatoes already make the meal filling.
Full traditional pot method
- When using frozen chicken, thaw it overnight in the refrigerator. Pat the chicken dry and season lightly with salt and black pepper.
- Heat the fat in a heavy-based pot. Brown the chicken in batches. Remove it to a clean plate.
- Fry the onion or leek, carrot and garlic in the same pot for 4–5 minutes until they begin to soften.
- Stir in the specified flour when used, or begin adding the liquid directly.
- Stir in the stock, mustard, apricot jam, vinegar, thyme and bay leaf. Scrape the browned flavourful bits from the bottom.
- Add the potatoes and pumpkin or butternut. Return the chicken according to the applicable timing note.
- Cover and simmer gently. Stir carefully from time to time so that the vegetables do not break up.
- Add the green beans during the final 8–10 minutes.
- Stir in the milk or cream near the end. Allow it to heat through without boiling the sauce rapidly.
- Remove the bay leaves. Taste and adjust the salt, pepper and acidity. Finish with parsley where used.
- Let the pot rest for 5 minutes before serving.
Keep the apricot-mustard flavour balanced
These practical choices use ingredients already found in the three budget versions. They help you adjust the sauce without losing the recipe’s character.
Mustard
Smooth mustard blends evenly into the sauce; wholegrain mustard adds more texture. Use the amount for your chosen budget and taste again only at the end.
Apricot
Use apricot jam rather than apricot syrup. If the jam is very sweet, balance the cooked sauce with a few extra drops of vinegar at a time.
Pumpkin or butternut
Pumpkin and butternut can replace one another. Cut the pieces to a similar size so they cook at the same rate.
Milk or cream
Add milk or cream only during the final five minutes and then heat the sauce gently; vigorous boiling can cause it to split.

What shall we drink with it?
Cold rooibos apple drink
Brew the rooibos with the cinnamon stick. Allow it to cool and mix with cloudy apple juice and lemon.
Rooibos’s gentle, earthy flavour suits the browned chicken and thyme. Apple echoes the apricot, while lemon makes the creamy sauce taste lighter. The drink is refreshing without overpowering the dish’s familiar South African home-cooking flavours.
Store it safely
- Thaw frozen chicken in the refrigerator, not on the kitchen counter.
- Keep raw chicken and its juices away from cooked food.
- Use a clean plate and clean utensils for cooked chicken.
- Cook chicken thoroughly to at least 70 °C in the thickest part; the juices must run clear and the centre must not be pink.
- Refrigerate leftovers within two hours.
- Use refrigerated leftovers within three days.
- Reheat leftovers only once and heat them until steaming throughout.
